How to Make Garam Masala Paneer Curry - Step by Step
Step 1: Prepare the Paneer
Cut paneer into medium-sized cubes, not too small. If cubes are too small they break, too large they do not absorb gravy.
Heat 1 tablespoon oil and 1 tablespoon butter in a pan over medium heat. Add the paneer cubes with a little salt and 1/4 teaspoon haldi. Cook for 2–3 minutes until lightly golden. Remove and keep aside.
Remove paneer and keep aside on plate. If you are using refrigerated paneer that feels hard, you can soak cubes in warm water for 5 minutes after frying to keep them soft. This trick works very well.
Step 2: Start the Gravy Base
Heat 1 teaspoon oil in the same pan. Add chopped onions and cook until soft. Add chopped tomatoes, cashews and ginger-garlic paste. Cook for 7–8 minutes until the tomatoes become completely soft. Switch off the heat and allow the mixture to cool slightly. Blend into a smooth paste, adding a little water if required.

Step 3: Add Tomatoes and Dry Spices
Heat 1 tablespoon butter and 1 teaspoon oil in a pan. Add the prepared tomato-cashew puree. Cook on medium heat for 4–5 minutes, stirring occasionally.
Add turmeric powder, coriander powder, red chilli powder, Kashmiri chilli powder and salt. Mix well and cook for another 2–3 minutes. Add around 1/2 cup water and adjust the consistency according to your preference.
Step 4: Add the Garam Masala - Most Important Step
Now add 1/2 teaspoon VAAHE Garam Masala and mix well. garam masala is generally added toward the final stage of cooking to retain its rich aroma, though usage may vary by recipe.
add crushed kasturi methi and mixed gently.
Cook for about 1 minute after adding. You will immediately notice aroma - cardamom, cassia, pepper, cloves coming together. That is when you know blend is fresh.
If your garam masala is very strong, start with slightly less, about 1/3 teaspoon, then add more if needed. Because VAAHE is 17+ spices blend and freshly ground, it is concentrated.
Step 5: Finish the RECIPE
Add around 1/2 cup water and mix well. For thinner gravy add a little more, for thicker keep less.Let gravy simmer for 3-4 minutes on low-medium heat. This helps all flavours come together.
Add cooked paneer cubes and gently mix them into gravy. Do not stir harshly or paneer will break. Coat paneer nicely.Cook for another 2-3 minutes so paneer absorbs some gravy.
Finally add 2 tablespoons fresh cream and chopped coriander. Mix gently and switch off heat. Cream is optional but adds richness and balances acidity of tomatoes.

Your garam masala paneer curry is ready.
Tips for Better Garam Masala Paneer Curry
These small tips make big difference.
Don't Overcook the Paneer:
Paneer only needs few minutes. Overcooking makes it firm and chewy. Light golden is enough. And soaking in warm water after frying keeps it soft if paneer is from fridge.
Add Garam Masala Near the End:
This is not just tradition, there is logic. Garam masala is aromatic spice blend with volatile oils. Long cooking reduces fragrance. Adding near end keeps aroma. VAAHE site also says same - prolonged cooking is usually unnecessary, adding near end helps preserve aromatic character.
Make the Gravy Smooth and Creamy
For restaurant-style paneer butter masala, blend the cooked tomato-cashew mixture until completely smooth. If the gravy is too thick, add a little warm water.
Adjust Gravy Consistency:
Amount of chilli powder can be changed as per preference. If your family likes less heat, reduce to 1/4 teaspoon. If garam masala is already quite strong, start with smaller amount and add more if needed. Always taste.
Use Fresh Paneer:
Fresh paneer gives softer texture. If using refrigerated paneer, soak cubes in warm water for few minutes before adding to curry. Also good quality paneer does not break easily.
Use Good Quality Garam Masala:
. Old garam masala that has lost aroma will not give same result even if you add more. You will just get dusty taste. A fresh, sealed-fresh, single-origin blend like VAAHE that is lab tested and farmer direct retains oils, colour and aroma. Difference is immediate when you open tin.
What to Serve With paneer butter masala
This paneer curry pairs well with almost everything.
With Indian Breads:
Roti, butter naan, tandoori roti, laccha paratha, plain paratha. For everyday meal, roti is perfect. For special dinner, butter naan makes it feel like restaurant.
With Rice:
Jeera rice, plain basmati rice, pulao. If you have leftover rice, this curry makes excellent quick lunch.
Simple Complete Meal:
For simple meal, serve curry with roti, sliced onions with lemon and green chilli, and bowl of fresh curd. That is enough.
For Guests:
If guests are coming, serve with both roti and jeera rice, plus green chutney and papad on side. Looks complete without extra effort.
Frequently Asked Questions
Can I make this paneer butter masala without cream?
Yes, but cream gives paneer butter masala its signature rich and creamy texture. If you don’t have cream, you can reduce or skip it, but the final gravy will be less rich.
Can I use homemade garam masala?
Yes, homemade garam masala can be used in this recipe. Since strength of homemade blends can vary a lot depending on what spices you used and when you ground, start with small amount, say 1/3 teaspoon, and adjust according to taste. Freshly ground homemade is usually stronger than old store powder.
How much garam masala should I add to paneer curry?
For 250g paneer, 1/2 teaspoon is good starting point. That is what VAAHE also recommends - begin with small quantity because garam masala is concentrated, adjust according to dish and servings. You can add little more if you want stronger aroma, but do not exceed 1 teaspoon for this quantity or it will dominate.
Can I add vegetables to this recipe?
Yes, you can. Bell peppers / shimla mirch, peas / matar, spinach / palak can be added to make curry more substantial. If adding peas, add along with tomatoes. If adding bell pepper, add after onion and saute for 2 minutes so it stays crunchy. If adding spinach, blanch and add at end.
Can I prepare this curry ahead of time?
Yes, you can prepare gravy in advance and keep in fridge for up to 2 days. Add paneer while reheating, not before storing, because paneer can become hard if stored long in gravy. While reheating, add little water if gravy becomes too thick, because gravy thickens after cooling.
Can I make this vegan?
Yes, use tofu instead of paneer and skip cream or use cashew cream. VAAHE Garam Masala itself is vegan as per brand description, cruelty-free blend.
Why does my paneer become hard?
Two reasons - overcooking paneer while frying, or cooking too long in gravy. Fry only 2-3 minutes light golden, and after adding to gravy, cook only 2-3 minutes. Also refrigerated paneer is harder, so warm water soak helps.
What makes Paneer Butter Masala different from other paneer recipes?
Paneer Butter Masala is known for its rich, creamy tomato-based gravy, butter, cashews and aromatic spices. The smooth gravy pairs perfectly with soft paneer, naan, roti or rice.
